The zucchini’s, or courgettes if you’re that way inclined, are going cray cray in the garden at the moment. We’ve been pulling some mammoth ones out recently and we think marinating before cooking is the business. We had this for breakfast with homemade halloumi and a bunch of salad greens.
How We Made It
Marinate the zucchini in lemon/orange juice, zest, balsamic, pepper, chilli fakes, cumin and add salt just before you cook them. Marinate them for a minimum of 30 minutes. Grill on the BBQ or in a hot pan.
